Glucono-delta-lactone (GDL)

Glucono-delta-lactone (GDL) – acidifying agent, the white crystallized powder with no flavor and sweet taste. It is soluble in water and derived by dextrose aerobic fermentation in order to get glyconic acid. Glyconic acid is to be dehydrated to get glyconate.
